Avocado Chickpea Sandwich

 

If the me from years ago could only see me now,

I’d be hard to recognize, she’d likely raise her brow.

My youth covered by lines collected along the way,

Choices have molded someone new, the someone she sees today.

She would weep over the lost plans she always held so dear.

Alongside her, I would acknowledge her pain, evident in my tears.

The person she thought that she’d become looks nothing like me now,

Embarrassment sweeps over me as I wish I could go back somehow.

“I know I’m hard to recognize without all your dreams on display,

But I think as you get to know me, you’ll see I am better off this way.”

I would watch her disappointment dissolve along with all the fear.

My sacrifice, she would come to see, is why I’m happy here.

 

I was thinking tonight about how differently life has turned out for me than I had originally planned–and boy did I plan. I had a plan B, (C, D AND E–just in case), and yet I am here. It’s hard to write anything that truly does those feeling justice, but I thought I’d give my racing thoughts a place to fall.

Completely unrelated, but a current dinner/lunch staple around here, Avocado Chickpea Sandwiches. I honestly think these are to die for. It is creamy, tangy, and so filling. TRY THESE!


Chickpea Recipe

Avocado Chickpea Sandwich

Ingredients

  • 1 Can of Chickpeas (Garbanzo Beans)
  • 1 Large Avocado
  • 3 Tbsp Relish (I love dill pickle relish, but if you prefer sweet relish that's great too!)
  • 1 1/2 Tbsp sweet hot mustard
  • 2 tsp Lemon Juice
  • 1/2 tsp Garlic Salt
  • 1/2 tsp Dill Weed
  • 1 Stalk of Celery
  • Salt and Pepper to Taste
  • Bread for sandwiches
  • Sandwich Toppings: Lettuce, Tomato, Onion, etc.

Instructions

  1. Place the chickpeas into a bowl of water. One by one, take them out of the water and remove their shell. Once removed, put them into a medium bowl.
  2. Mash up the chickpeas with a fork.
  3. Add the avocado and mash together
  4. Add the relish, mustard, lemon juice, salt, dill weed, and celery and mix to combine.
  5. Put it on bread and add your favorite toppings!
