Super Quick Stir-Fry

I had to try my best not to title this “super-fly, stir-fry”. It just sounds right (side bar, do high schoolers say fly anymore?). Okay, it may not be fly, but it is undoubtedly super quick. We have this at least once, often twice a week…

I’ll openly admit it, I’m not that plan-ahead, perfectly set table, kind of wife. I’m the: oh crud you’re home, we’re all about to kill each other we’re so hangry, I better make something quick, kind of wife. Ta-da! Super quick stir-fly! It takes less than 15 minutes to prepare, its full of vegetables, and uh, duh! its delicious!

  • 2 T oil (We use avocado oil, but any oil you have on hand should do.)
  • 1/2 head of broccoli
  • 1/2 head of cauliflower
  • 2 large carrots
  • 1/4 cup bean sprouts
  • 1/2 cup snow peas
  • 1/4 cup sliced water chestnuts
  • These are my staple ingredients, or if I'm wanting to make an easy dinner even easier, I just buy a bag of precut stir fry veggies. This bag is one of my favorites because more than half of the vegetables are cut like noodles so my son eats them just like the noodles.
  • Other ideas to add would be: onion, red peppers, baby corns (what the heck is the real name for these adorable little things?), cashews, pineapple, etc.
  • 1 package of stir-fry noodles (There are a variety of noodles out there. In my opinion the best ones are in the refrigerated section, normally near the salad or tofu.)
  • 1/2 cup teriyaki or other stir fry-sauce. (If you want to make sure your kids/family loves this, go ahead and add some extra sauce:).


  1. Cut vegetables into bite-sized pieces. You will want to very thinly slice your carrots or they will take a long time to soften.
  2. Heat oil to a large skillet over medium heat.
  3. Add vegetables to the oil. Be sure to mix so all veggies are coated with oil. Stir constantly for 5-6 minutes. (If you like your vegetables softer, you may want to cover them for an additional 8 minutes, lifting the lid and stirring occasionally.)
  4. Prepare noodles according to package directions.
  5. Add prepared noodles to the cooked vegetables.
  6. Add teriyaki, or other stir-fry sauce, and stir for 2-3 minutes.
